In the beer brewing process, besides process technology, the most critical aspect is cleanliness. The best way to ensure the production quality and consistency of beer is to have a consistent and thorough cleaning system. Clean-in-place (CIP) systems are a vital component of every cleaning plan.
What is CIP?
Clean-in-place refers to the process of cleaning professional brewing equipment without the need for disassembly or transportation to other locations. Initially a manual operation involving a balance tank, centrifugal pump, and connections to the system being cleaned, CIP has evolved into fully automated systems with programmable logic controllers, multiple balance tanks, sensors, valves, heat exchangers, data acquisition, and specially designed nozzle systems. Compared to traditional manual cleaning, it offers several advantages.
CIP working principle:
The CIP system is used for cleaning tanks and pipelines and can be equipped according to manufacturer requirements:
Hot water tank
Alkaline water tank
Acid tank
Disinfectant tank, etc.
Cleaning cycle:
Pre-rinse: This phase involves rinsing away the majority of dirt and residue with water, preparing the equipment for deeper cleaning.
Caustic Cleaning: Utilizing caustic soda (sodium hydroxide), this phase effectively breaks down and removes organic soils, with the captured solution often recycled for sustainability.
Flushing: Water is used to thoroughly flush the equipment, with an emphasis on recycling water where feasible.
Pickling: Phosphoric acid is employed to eliminate beer stone buildup, ensuring optimal equipment performance and hygiene. The acid solution is captured and reused in an environmentally conscious manner.
Final Flush and Disinfection: The equipment undergoes a final rinse with water to remove any remaining residues, followed by disinfection using peracetic acid (PAA) to sanitize and prepare the equipment for the next brewing cycle.
For breweries, CIP systems represent a strategic investment in achieving fast, efficient, and consistent cleaning processes that uphold stringent quality standards. These systems not only enhance operational efficiency but also contribute to product safety and integrity by ensuring thorough cleaning of product contact surfaces. By embracing automation, precise control, and diligent monitoring, CIP systems play a pivotal role in maintaining hygiene excellence and safeguarding the reputation of breweries for producing top-tier beers consistently.
