The main features of the modern conical fermentation tanks
At early years 1908 and 1927, Dr. Nadan has already applied for a patent of fermenting with vertical cylindrical conical fermenters. He built his first “Nathan tank” on the year 1930, which with much quicker fermentation and maturation time. But regrettably his invention has not been widely admitted.
The cylindrical conical fermentation tanks started to be noted on 1960s, and the Nathan tanks keeping improved since then. Now the conical fermenters mainly with the features as below:
1.With cone bottom,the angle range from 60-90 degree which is convenient for recycling yeast.
2.With cooling jacket and the cooling capacity meets the fermentation requirements. There will be 2-3 stages of cooling jacket outside of the body tank and 1 stage on the cone bottom.This structure is good for the settling and storage of yeast.
3.The conical tanks are sealed which can be used for recycling CO2 and doing CO2 lavation. The fermentation and aging can be occurred in the same tank.
4.There is strong natural convection inside of the tank, the higher, the stronger.
5.The tanks must with reasonable height, which is good for settling yeast.
6.The conical fermenters not only suitable for bottom fermentation, also the top fermenting.
