According different kinds of yeast, beer can be divided into two types
Top-fermenting, such as ALE, it is in high fermenting temperature, 14-25℃.
Bottom-fermenting, such as LAGER. It is in low fermenting temperature, 4-12 ℃.
Usually, we use yeast feeder to mix the yeast and 5 times wort in10-15 degree C temperature.
It takes 10-12 hours to cultivate yeast. After budding, fill the yeast with sterile air,then transport the yeast
to fermenter with hose. We cool the hot wort to make sure yeast activity and yeast propagation.
When yeast is propagating, it needs a lot of oxygen. If it not be aerated in time, the yeast will die.
We use the sanitary wort aeration mounted with stone. It can go with oxygen cylinder or oil-free air compressor.
Yeast propagation tank looks like fermenter. Generally, 1000L fermenter matches
with 100L yeast propagation tank.For large brewery, it can make sure the yeast purity.
For smaller brewery, it is used to separate after fermented viable yeast, recover it and propagate.
