The sterilization agent used for brewery equipment should be poisonless and tasteless, and no corrosivity. Therefore, so breweries would adopt steam or hot water for equipment sterilization. However, for steam sterilization, it is necessary to keep the equipment under 100 ℃ for 15-20 minutes at least. Otherwise it does not make sense. And the equipment should be cleaned in advance, or it will make the sterilization difficult as the dirt would stick on the equipment surface.
In modern breweries, the brewery equipment capacity becomes bigger and bigger. In this case, it is not suitable to use hot sterilization as it is possible to cause vacuum in tank which is very dangerous. So, most of breweries adopt cold sterilization whose temperature is lower than 40℃, then achieve sterilization by chemical or physical reaction. The common sterilization agent consists of Alkaline fungicide, Acidic fungicide, iodine fungicide and methanal etc.
