What is the smallest brew we could do in a 20 BBL brewhouse with double size fermenters? Could you do a half brew and just use more gas in the fermenter?
Firstly, it is no problem and normal in a brewery to fit only 20bbl wort in a double size fermenter (40bbl) via using more gas in the fermenter.

To clear this question, we need to know if the lauter will be affected with small batch size brew (means thinner grain bed).
The grain bed can not be too thinn (or too thick), a ideal scale is 30-40cm. And in the practical operaiton, it can also be 25cm -45cm.
A perfect grain quantity to brew beer with 20bbl brewhouse (with our standard inner diameter of 1600 mm) is 350kg-450kg (the grain bed is between 30-40cm).
Since some brewmaster also lauter with 25-45cm grain bed, then the grain quantity will be around 280-500kg.
So the smallest batch could do with the 20bbl brewhouse can be 280kg grain, with this 280kg grain, we can brew:
high plato beer(16P-18P): 840-1120L
middle plato beer(14P): 1400l
Normal/light beer(8-12p): 1600l
