1.Alpha-acid: it gives beer refreshing and bitter taste as well antiseptic ability.
2.β-acids: The same as Alpha-acid
3.Hops oil: it imparts very aroma flavor to beer
4.Polyphenol: Promote protein coagulation and improve non-biological stability of beer.
The most important reason to add hops:
A: Impart signature flavor and refreshing bitter taste into beer.
B: Keep the beer foam in a long persistance and keep it stabilized.
C: Promote protein coagulation during wort boiling to get clear wort for fermenting.
