The essential requirements for the beer brewing water?
(1)The brewing water should be clear and without the suspended sediment. Or it will influence the transparency of wort, then making the beer muddy easily.
(2)After heated the water to 20-50℃,tasted no peculiar smell. It cannot be adopted if with saline, bitter or astringent taste.
(3)The salt in the water should between 150-200mg/L, the beer will taste bad if the brewing water with higher content of salt.
(4)The PH of the brewing water should between 6.8-7.2, the mashing will not be finished smoothly no matter with higher alkaline or higher acidity.
(5)The organic matter in the water can be calculated by the oxygen consumption of potassium permanganate, it should below 3mg/L. If exceed 10mg/L, it meas the water has already been serious polluted.
(6)The total hardness of brewing water for light beer should below 8°DH ( equal to 5.706mmol/L). Of course, the brewing water used for dark beer can with alittle higher hardness.
(7)The content of Fe in the water shoul dbelow 0.3mg/L.
(8)The brewing water should with no ammonium salt or cannot exceed 0.5mg/L. Or the water will not clearn.
(9)The content of chloride in water suit with 20-60mh/L.
(10)The content of silicate in water better below 30mg/L.If exceed 50mg/L, the wort will not clear and the micelle will be appeared when fermenting, besides, it will influence yeast fermentation and beer filtering.
(11)The total number of bacteriaand e. Coli in water should meet drinking water standards.
