The “One-tank Fermentation” just mean the whole fermentation progress will be finished in same one tank.At this time, we call the fermenter as unitank.
The advantages of the “one-tank fermentation” is that it with simply operation; convenient for controlling the temperature, pressure or liquid level; and convenient for collecting or recycling yeast; and it no need to trasfer the beer to another tank which will reduce the beer oxygenation and reduce the beer loss. The disadvantages is that it with stronger beer convection, many of the trub cannot be discharged well, so the mouthfeel of the beer is not very smoothly. Besides, the utilization of the fermenters is much lower.
The “two-tank fermentation” just mean the primary fermentation taking place in fermenters and secondary fermentation taking place in brite tanks.
The advantages of it is with much higher utilization; after the yeast discharging in primary fermentation, the yeast could be totally settlled, so the beer looks more clear. The disadvantages is that the beer is easily oxidized during the progress of transfering beer from fermenter to brite tank. So please be more careful during operation.
