About the gas cost,as you know, since different brewmasters has different brewing method,so the heating cost during brewing also have some difference.
Take 15bbl (1800l) beer system with single mash raised temperature infusion method for example, the brewmasters heat the water tfrom 25 -35°C and do the mashing at 35-37°C,dipping the malts in the water, and then raised the temperature to 50°C for decomposing its protein.and then rasing the temperature to 65°C slowly,at the 72°C,it needs to do the mashing sectionally, and then raising temperature to 78°C for lautering.
So its rough heat cost is about 1800X(78-25)=95400Kcal/h.
If the heating time is 60minitues.
So 95400Kcal/h /60=159.0KG/H (Rated steam output)
For its boiling stage: 1800L boiling kettle, and the initial liquid temperature in the tank,it is 78°C,and heated to 100°C.
So 1800X(100-78)=39600Kcal/h.
If the heating time is 60minitues.
So 39600Kcal/h /60=66.0KG/H (Rated steam output)
Adding together ,so it needs the steam boiler capacity about 159.0KG/H+66.0KG/H=225KG/H(Rated steam output)
Since mashing heat and boiling heat not often use at same time,so 200KG/H steam boiler is ok.
1m³ gas could gernerate about 8000Kcal to 8500Kcal energy. So it needs about totally (95400+39600)/8000=17m³ /h gas.
