1.Preservation method of pure yeast In beer production, there are mainly the following ways to preserve pure yeast:
Solid slope method: This is a simple and effective method suitable for the preservation of beer yeast.
Liquid test tube method: It is also suitable for the preservation of beer yeast and is easy to operate.
Other methods: such as the liquid paraffin slope method and vacuum freeze drying method, are rarely used in beer production.
2.Preservation of production yeast The following are several methods for preserving production yeast:
Hansheng tank preservation method: This method is commonly used in large breweries. After expanding the culture of pure yeast in the Hansheng tank, a part of the fermentation liquid is separated, and the remaining yeast is added to the sterilized wort, cultured at 2-4°C, and the wort is replaced regularly to ensure the quality of the yeast.
Squeezed yeast preservation method: Under low temperature environment, squeeze and dehydrate the cleaned yeast mud, crush it, and store it at a low temperature. Make it into the mud with sterile water when using it.
Mud yeast preservation method: Soak the cleaned yeast mud in 0-2℃ sterile water, change the water every day, and it can be stored for up to 5-7 days. Suitable for short-term yeast.
Fermentation broth preservation method: Take out the fermentation broth at the peak of fermentation, quickly cool it to 2-4℃ for storage, and use it to inoculate the next batch of wort fermentation. The storage time can reach 2-3 weeks.
