The key to improving the utilization rate of the brewery is to shorten the production cycle and optimize the operating time of each container. The following are specific strategies:
(1) Optimize the storage cycle of the mixture tank
Generally, the storage time of the Fermenter is the longest, which is almost equal to the storage time of the filter tank plus the time of wort boiling. Therefore, we can shorten the working time through reasonable arrangements. For example, when boiling, it can be used to store the next batch of wort, which can reduce the storage time of the activator to 160-190 minutes and achieve an efficient turnover of about 7.5-9 times a day.
(2) Shorten the wort discharge time
The wort is affected by many factors when it is discharged. If it cannot be completed efficiently, the total time may be extended to 4-5 hours. By optimizing the process and ensuring that the lees retention time does not exceed 180 minutes, 8 turnovers can be completed per day. Combined with efficient wort filtration, the fermentation time is only 120 minutes.
(3) Accelerate the recycling of rice paste pot and Mash Tun
By increasing the feed temperature of auxiliary materials to 65-70℃ and using constant temperature fermentation amylase instead of malt alcohol, the saccharification process can be heated directly, thus saving heating time.
In addition, appropriately reducing the amount of auxiliary agents, or adding protease and glucanase, lowers the protein standing temperature, thereby reducing the protein standing time and overall saccharification time, further improving the production efficiency of the brewery.
