(1) Rice is one of the most commonly used adjuncts in beer brewing in China, which can be divided into whole rice and broken rice. Broken rice is a by-product of rice milling plant.
Rice is characterized by low price, high starch content, high leaching rate, lower protein content and polyphenol content than barley. The wort yield per unit mixed raw material can be increased by using it as auxiliary material. Proper proportions can be beneficial to beer taste, color, foam persistence and shelf life.
However, due to the high saccharification temperature of rice, starch gelatinization should be carried out in advance with the help of liquefying enzyme (a-amylase), so that it can be easily accelerated by malt enzymes Saccharification.
(2) Corn, like rice, has the characteristics of low price and high yield. In addition, the content of unsaturated fatty acids in wort made from corn is higher than that of wort made from other excipients, so under anaerobic conditions, this wort is conducive to the reproduction of yeast, but excessive use of corn will reduce the content of soluble nitrogen in wort, reduce the fermentation performance, and affect the foam holding of beer.
As the fat content of corn is as high as 4% ~ 5%, it is necessary to degerminate and pregelatinize corn first.
(3) Although the starch content of barley and wheat is not as high as that of rice or corn, it has its own characteristics: it contains a small amount of enzymes, such as a-amylase and amylase in wheat, b-amylase and protease in barley, which can assist the enzyme action of malt in the process of saccharification; the gelatinization temperature of starch is low, so it can be directly added into the saccharification pot without pre gelatinization, but the appropriate degree of comminution should be controlled, The gelatinization and saccharification were better at the saccharification temperature at about 65 degrees Celsius. Barley was directly used as excipient, and the composition of wort was similar to that of whole malt wort. The content of glycoprotein and peptide of wheat was higher, not only the fermentation speed was fast, but also the foam persistence, and the low anthocyanin content of wheat was beneficial to prolonging the storage period.
As an auxiliary material, the dosage of barley is 30% ~ 35%, and that of wheat is 20%-25%.
(4) The main component of sugar and syrup used as auxiliary materials is sucrose, the content of which can reach more than 99%. Sucrose can be fermented completely, and the fermentation speed is fast, so it is a good auxiliary material. However, due to no nitrogen and high price, the use is limited to a certain extent. Generally, the consumption is controlled at about 10% of the total amount of raw materials. In order to improve the final concentration of wort, it can be added in the boiling pot.
Syrup is a popular beer brewing auxiliary material abroad. It can be made from beer brewing barley, brewery supplies wheat, corn and other cereals. Barley syrup is very close to wort composition, easy to add, is an ideal excipient, especially suitable for "high concentration beer fermentation process". Syrup contains fructose, glucose, maltose, maltotriose, dextrin and other components, and its fermentation performance is 65% - 95%. The addition amount is generally determined by de value (glucose equivalent).
