Why the cooling wort need to oxygenation? How to do it?
Beer yeast is faaultative microorganism, it will grow and reproduce in the condition of aerobic and fermenting in the condition of anaerobic. Before enter into the process of fermenting, yeast needs reach a certain number of level and the prodess need oxygen. So it need s provide oxygen for the yeast with the method of through sterile air and the dissolved oxygen reached 8-10mg/L in the wort.
In order to strength the dissolve effect of air in the wort,must through fine bubbles and mixed cooling wort with the method of vortices form. If the dissolved oxygen reached 8-10mg/L, theoretically it will need 3L air(per 100L wort), acturally it will throgh 10 times in the production.Because there is some air escape and distribute uneve.Besides with the increase of wort concentration and temperatue, the oxygen dissolved level will decrease.
Usually the oxygenation device install at the outlet heat exchanger. After compressed air release pressure into oxgenation device by air flow meter and filter,then put into reproduction groove and fermenter after wort and air mixed.
The usually used device is called venturi tube.
Both sides with large section and tighten tube in the middle. When the wort flow through venturi tube,due to the section become small suddenly and flow speed will faster. If through sterlize air in the tighten tube, it will inhalation the wort with fast speed and evently distribute in the flow wort with fast speed in the form of fine bubbles.The wort form into vortex at the section increase, it will good for wort distribute and close fine bubbles mix.
