We all know the mash tun with bigger capacity shoud with heating and stiring function. It is very portant about the design of the agitator size, its rotating rate should corresponding with the diameter of mash tun, whose linear speed cannot exceed 3m/s. But do you know why?
In the mashing liquid, the particles will remain their shape during free movement; But if with exogenic action, for example the rotating speed of the pump or the agitator blade far higher than the speed of the liquid, the shape of the particles will be changed and ruptured. One kind of external force will be formed especially at the edge of the blade, the pipes bend, the rough surface of the pipes and the outlet of pumps, it was called shear force. The shear force will link the glucan molecule which random exist in the liquid, and form the gel. It will not good for wort and beer lautering.
